
If I really do have diabetes , although there seems to be some doubt about that, then it has probably been complicated by my thoroughly enjoying cookies. My favorite commercial cookies are cheap gingersnaps. A pound bag for a dollar is about the least expensive I’ve found them.
Although inexpensive there is a problem with this particular brand. They are hard when I buy them and don’t get much softer with age.
If I still were in Galva, Illinois, a Swedish community, I would dunk the cookies in coffee, but this can make them a little too mushy. So I now warm them up in the microwave. Heating several for a minute or two softens them to a pretty nice texture.
One day my special friend, Elizabeth, listened to me complaining about stale potato chips. She suggested I do what she does and put the unfinished bag in the freezer.
And, indeed, it does work well. It is one of those ideas that is too simple to be true, but sure keeps the chips fresh for as long as they last. And, like the cookies, that isn’t too long in my household.
